Michael’s Roasted Pumpkin LasagnaSauceIngredients1/2 white onion finely diced2 cloves garlic chopped1 cup diced carrots1 cup diced celery1 cup diced pumpkin1 cup diced green peppers4 sliced mushrooms1/2 cup of sliced sundried tomatoes1 can of tomato paste1 can of tomato sauce1 can of diced tomatoes1 pack of ground beef/pork 2 table spoons of basil2 table spoons of oreganoSalt to tastePepper to taste1 table spoon sugar1/2 teaspoon of anise seed2 Bay Leaves1.In a large pot fry beef/pork in some olive oil until light brown, not dark brown.2.Remove meat from pot and saut? onion, garlic, carrots, celery, mushrooms, pumpkin, green peppers in the olive oil in the same pot until onions are clear.3.Add tomato paste, and diced tomatoes to the vegetables and cook for 2 mins.4.Add the cooked meat and sundried tomatoes back into the pot and add tomato sauce and add 4 cans of water using the tomato sauce can to measure. 5.Bring to a boil and reduce heat.6.Add spices to sauce and simmer sauce to the thickness you want stirring occasionally and tasting for correct salt and flavour. Minimum 2 hours.―Lasagna―Cooked Lasagna noodles (cooking directions on package)Mixed shredded Cheese Parmesan cheese Spinach PumpkinSliced mushroomsSliced Zucchini1/2-1 cup of cream1.Roast cubed lightly salted and lightly covered with olive oil pumpkin in an oven at 180 degrees C for 45 mins or until lightly browned2.After cooked in a bowl mash the pumpkin with cream and parmesan cheese to taste until chunky.3.In a baking dish pour one ladle of sauce in the bottom of the dish to cover the bottom.4.Add one layer of noodles and then pumpkin mash, zucchini, spinach and cover with sauce then mixed cheese and parmesan.5. Add another layer of noodles, then pumpkin, mushroom, spinach, cover with sauce and then mixed cheese and parmesan.6.Repeat steps 4 and 5 two more times 7.On the top layer of noodles cover with sauce and on the sauce add mixed and parmesan cheese.8.Bake lasagna covered with aluminum foil for 30-40 mins at 190 degress C, then uncover and bake for another 10-15 mins until cheese is golden brown.9.Take out of the oven and let stand for 5 mins then cut into pieces and serve./Ginza Study Advisor Mike
